Allspice
Allspice is not a collection of spices. It is the berry of an evergreen pimiento tree native to the West Indies and South America. It's name is derived from the fact that it tastes like a mixture of cloves, nutmeg and cinnamon. Whole it is used in stocks for poaching fish, in both vegetable and fruit pickles, for baking, wild game. Ground it is found often in spice cakes, puddings, cookies, gravies, and is necessary in Caribbean cooking, being the main ingredient in jerk dishes. If you make your own barbecue sauce, allspice is a great secret ingredient. The polish call it kubaba and use it whole.
