Cloves Ground or Whole

Cloves are mainly considered a sweet baking spice, though it's preserving qualities make it popular for pickling and barbecuing.  Add ground cloves to your cakes, cookies, pies or gravy.  Cloves are perfect when making a sweet marinade for ham or chicken.  Some chefs consider cloves to be secret ingredient in BBQ and cocktail sauces.  Because cloves bring out the flavor of beef, add a whole clove to beef stew or a tiny pinch of ground cloves to gravy.  Whole cloves are often used to "stud" hams and pork, pushing the tapered end into the meat like a nail.
