Coriander

The seed of the same plant that gives us cilantro, coriander has a light, lemony flavor that combines especially well with ginger.  Use to season foods that cook for longer than an hour, such as roasts, or items that are cooked for a shorter time but at a higher temperature, such as pan-fried, broiled or gilled meats.  It is an essential flavor in a good chili, also used to flavor cookies, pastries or breads, whole to flavor sausages or corned beef.  German recipes use coriander in pickling and homemade beer.
