Fennel Seed

  Fennel is known to have a long history among man, dating back to the Chinese and Hindus who used it as a cure for snake bites.  Fennel was hung over doors in the Middle Ages to ward off evil spirits.  At one point, to" give fennel" was synonymous with "to flatter".  The flavor is delicate, light and sweet, similar to anise.  Fennel has always been considered an aid to digestion, many people still drink fennel tea.  The fennel seed is used often with fish dishes, and is a crucial ingredient to good Italian sausage.  Instead of the whole seed, the ground fennel adds a mysterious element to a marinara or tomato sauce to go with any type of pasta.
