Fenugreek
Grown throughout the Mediterranean area, Fenugreek is an important ingredient of curry powders and pickling spices. Fenugreek's cultivation goes back through the ages, primarily because it was thought to have healing virtues. It even was an ingredient in the holy smoke which was a part of the Egyptian embalming ritual. An old-fashioned Arabic greeting was "May you tread in peace the soil where fenugreek grows." Fenugreek can add rich flavor to many vegetarian dishes that need a boost, and is also traditional on marinated lamb for shish-kabobs or gyros. Fenugreek can also be mixed with the coating mixture for breading fried foods and is delicious when added to beef stews. Two tablespoons fenugreek added to 1/2 teaspoon curry powder and 5 tablespoons butter gives a delicious taste to slowly sautéed freshly-boiled new crop small potatoes and gives them a golden brown color.
