Garlic

Garlic is probably the most heavily used seasoning in the world.  Garlic throughout the ages was highly touted for its varied medicinal purposes:  it was credited for curing everything  from the plaque to gun powder wounds.  Greek gladiators thought garlic gave them strength and courage, Romans thought of it more as an aphrodisiac.  One pound of dehydrated garlic is made from nine pounds of fresh garlic bulbs.  The flavor is just like fresh, making this product easy to use and of course easier to keep for an extended period of time than the fresh.  An eighth of a teaspoon is equal to one medium size garlic clove, 1-1/2 teaspoon equals one whole bulb.  The flavor in dehydrated garlic will be released when the garlic comes in contact with a liquid (rehydration).  You will find in most dishes you are making there will be enough liquid for the garlic flavor to be released.
