Ginger

In addition to the flavor ginger imparts, it is known to be a digestive aid.  The advantages of dried ginger are several.  For the purpose of storage, the dried spice, will keep indefinitely.  When needed simply soak for one hour to rehydrate and use as fresh.  It can also be grated on the small holed side of a cheese grater for coarse powder or pieces can be broken off.  Small pieces of dry ginger root can be thrown into stocks or fruit sauces.  A pinch of ginger is very nice to boost the flavor of salt free dishes, and also a flavorful addition to chicken soup, sautéed vegetables, and roast chicken or pork.  For a flavorful grilled steak, rub ginger, garlic and black pepper on meat, marinate a few hours prior to cooking.
