Juniper Berries

The dried fruit of a small evergreen shrub from Southern Europe.  The flavor is aromatic with a slight overtone of pine.  Crush the berries just before using to release flavor.  Excellent to marinade meat such as lamb or wild game such as bear, pheasant or venison.  Juniper Berries are great to season and reduce the wild taste of game and poultry. Juniper tea is a centuries old hangover remedy.  The distilled oil of these berries is what flavors gin.  Also you cannot make an authentic sauerbraten without the addition of juniper berries.  Try a few in your sauerkraut too!
