Tarragon

Tarragon is the most popular of the French herbs.  The rich, robust flavor combines especially well with the wine and shallot base of so many French dishes.  Very nice for a simple baked chicken or Cornish game hen.  Quite often tarragon is used to bring out the flavor of other herbs in herb mixes for soups and sauces.  Start with a small amount of tarragon in chicken and tuna salads, baked fish and poultry and cream soups, as tarragon can easily  overwhelm if you add to much. Use to flavor vinegar for salad dressings and marinades.
